Yummy home-ade BURRITOS

Hello people of the blogosphere!

it is me.. Jackie!
so today i made one of the most delicious things ever! BURRITOS.
now they are a little high on the calorie count ( went WAY over what i was supposed to today ) but its alright as long as its pretty healthy and not fried foods, and not over your BMR ( basic metabolic rate )


SO FIRST I MADE THE GUACAMOLE ( YUMMM ) 
Easy Peasy Guacamole!:
1 avocado
5-6 cherry tomatoes
little bit of garlic ( powder or crushed )
Squirt of lemon juice
About 1 tbsp of olive oil
SALT
( i dont really measure things lol )

1. in a food processor dump all the ingredients in and turn on to process!
2. mix it up a little
3. EAT BY THE SPOONFULL ( i am guilty of this crime )



Then i made the rice and bean paste! YUM ( basically everything is yum in this recipe )

I dont have pictures for either of these ( i know shame on me ) LOL

Bean Paste:
1 can red kidney beans ( or any beans you like )
Splash of vegetable broth
Mrs.Dash
Salt
Garlic Powder
Little bit of oil
Cayenne Pepper
( basically any good seasoning i could find i put in )

1. turn on your stove and in a pot put a little oil and the washed/drained beans
2. when it starts getting hot put the vegetable broth in ( dont worry if its too much it will cook out )
3. add the seasonings and start mashing with a potato masher/fork or whatever you use
4. stir on medium heat until preferred consistency
5. put in a bowl and enjoy!


Seasoned Mexican Rice:
Brown rice ( i really have no idea how much i used )
Vegetable broth
( same thing on the spices as the bean paste )
1 Bouillon cube ( vegetable ) ; crushed
LOTS of salt
Oil

1. Boil your rice ( Tip: before you put water in for the rice; put the rice in with some oil on low heat and stir it around until all the rice is a little coated. This will stop the rice from sticking and will have the perfect consistency ) also for the water ( if you dont know how much to use you always put about 2 fingers sideways amount of water above the rice. )
2. On a big frying pan put all your rice and seasonings and crushed bouillon cube with a little oil and just mix until combined
3. start adding vegetable broth a little at a time until the rice is a little bit more moist and tender ( this keeps the rice from being dry )
4. Serve and Enjoy!


So personally how i made the burrito is i took a tortilla, shredded cheese, i heated up some veggie ground beef, added the bean paste, guacamole, rice, and topped that sucker off with LOTS of sour cream! ( c'mon im russian.. we have to have our sour cream! )
                                                          and this is the end result!
looks DELISH doesnt it?! well it was :P and it fills you up to the point when you cant breathe! ( its like grandmas dinner in one little ( not very little ) piece of heaven! )

WELL HELLO THERE AGAIN

Well hello there blogging people.
i am back.
sorry i have been on such a long break but so much stuff happened
1. we had to give away tinkerbell because she had epilepsy :(
2. i got off the bandwagon of healthy foods ( i know shame on me )
3. i started going to high school ( i was homeschooled before )


the list can go on and on. its about the size of texas..
well i started doing healthy things again and started exercising! until i got sick... yay...
but i pack my own lunches for school so i can pack healthier alternatives.. YAY!
WELL speaking of which im going to go pack tommorows lunch.. 2 math tests that i missed and 2 overdue projects.. yay... fun things in my life right? lol
sooo thats it i guess!
i will be back soon! :D

HEYY!!

Hey guys! Sorry I haven't been on in a while! It's because I got another dog! ( I have 2 ) She's a Morkie :) her name is Tinkerbell!! How cute is she?!

Soooo on to a simple recipe :D

Ricotta dessert:

Bowl of light ricotta cheese
Some splenda
2 dates

Cut dates and mix everything together!
Voila! You have a yummy dessert! :)

Lol im posting this on my iPhone because she is finally asleep in her playpen :)

Update! + Vegan stuff i found :)

Hellooooooooo again people of the blogosphere ( do you like that word? i do :D ) sorry i was gone for so long :( i had an audition and other stuff and blah blah blah * cough * other fake excuses * cough * :)
SOOOOOO anyways :) i got my braces tightened today :( NO ME GUSTA :( BUT on the bright side look how much my teeth have changed!
Yeah... very attractive lol ;)
NOW HERE ARE MY TEETH AFTER 2 MONTHS :D
You can see a little difference right? :D

So onto the vegan stuff i found :D

I dropped by a vegan danish bakery we have here ( its connected to my favourite costume shop for halloween :D ) its really small but really cool!
They have:
Pizza
Lasagna
Soft Serve
LOTS o' Bread :)
Veggie burger patties & buns
Yogurt
Hot dogs
Danishes ( cherry, blueberry and apple today :) )
cakes GALORE!!
Soy butter
Daiya cheese 
VEGAN DOG FOOD! lmao
tons more :)
all fit into a little shop where only like 2 people can be fit into, like seriously :)
this is what i got :)

MMMMMMM......... Carrot Cake Square ( IT IS SO GOOD) a little too sweet tho ;)
                           Adair!! Look what i got :P DAIYA CHEESE! you have been raving about it! they                      have it in cheddar too!
 And some soy yogurt! i had a little, its not very creamy its more like uhmm how do i describe it... like a little but more crisco-ie lol but not in that " yuck I'm sticking a ton of lard in my mouth " but more like " this is unique and weird... but i like it ;) " and its not too sweet because its only flavoured with fruit extracts so i would add something on top :)

My Brownie Experiment Success! + 1 of my 6 bunnies!

I was playing with my bunny ( one of six ) his name is Tuxedo! Isn't he so cute? :)

Sooo my brownie experiment success!
I wanted to find a low cal dessert or some kind of yummy thing to make!
So I tried to make my own recipe and it worked!
It's chewy, soft, rich and sugar free!

Brownie Experiment:

Ingredients:
2 cups bread flour ( it makes it chewy )
1/4 cup oats
1 serving/package hot chocolate mix
2 tbsp + 2 tsp cocoa powder
1/2 cup oil
1 cup Splenda
1/4 cup melted chocolate chips ( 1/4 cup chips + 1 tbsp oil )
2 eggs
1 cup milk
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp vanilla
1/2 cup chocolate chips


Directions:
Preheat oven to 350F
Mix everything but chocolate chips,
Stir in chocolate chips.
Bake for 25 minutes.
Cut
Sprinkle with splenda/stevia
Enjoy!

It's super yummy!

My Brothers First Trip + Mexican Salad!

Hi guys! It's Jackie! Well.. Duh who else would it be? :)
Me and my mom dropped off my brother at the airport for his first flight alone :( He went for a week to North Carolina to visit his friend which is pretty far from Toronto :D


Okay on to the recipe :)


Mexican Salad:

Ingredients:
2 heads of romaine lettuce; chopped
1 avocado ; cut into small pieces
1 carton of cherry tomatoes ; cut in half
Some green onion ; cut into small rings
1 can or bag of corn ( frozen or Fresh ) ( I didn't have any do I just didn't put it in there )
1 can red kidney beans ; drained
Some veggie ground beef ( fake ) ; heated
Shredded cheese ( optional )
3-5 tablespoons salsa ( depends on your taste )
Halepeno oil ( optional )

Directions:
Cut the lettuce,avocado,tomatoes and onion and put into a bowl.
Heat up the corn ( if it's frozen ) if its not then just drain and drop in.
Drain and add the beans.
Heat up the veggie ground beef :)
Add the cheese ( optional )
Then add as much or as little salsa as you want ( depending on your taste )
And the halepeno oil ( optional )
Mix it all together.

And your done :D
You have a yummy and easy appetizer/main course :)
